Chicken Burrito Bowl + A Change in My Exercise Routine (FREE WORKOUTS!)

This is one of those posts that I’m starting with no clue of how it’s going to turn out, and at this point, nothing feels more right. :o) Big things are happening in my little world right now, and at any given second, my mind is in what feels like 60 different places. Some days, it’s exhausting. Others, it’s completely invigorating. Today is totally the latter.

I’ve been up since 4AM and have been going nonstop. I had a two-hour workout this morning, and I’ve been way more productive at work than I feel like I’ve been in the last several days. I’ve also had a few “aha”/lightbulb moments that I’ve been waiting for, and to top it all off, I’m going to my first football practice tonight.

That’s right — football practice.

I’ve been recruited to play Ultimate Women’s Football with the Austin Inferno, and I’m going to my first outdoor practice this evening. Yes, it’s full-contact. Yes, I’ll be wearing full pads and a helmet. And, yes, I’ll probably get beaten up quite a few times this season, unless I get there tonight and decide it isn’t for me (which I don’t think will happen). Mediterranean Shrimp and Quinoa Salad

Alright, guys. Bear with me here. This recipe is a little different than my standard “cleaned up comfort food” (it’s a far cry from my Chicken Spaghetti Casserole or the Alfredo recipe), but I promise it’s equally amazing. With the weather getting MUCH warmer, lighter dishes that aren’t as cheese- and sauce-laden have become more appealing to me. This one can be served chilled or warmed up (I prefer chilled), and it holds well for lunches throughout the week if you decide to make it for meal prep.

During the first few weeks of helping my boot camp friends prep their meals, I was approached by a pescaterian friend who wanted me to set her up with some lunches. I came up with this on a whim as I was trying to think outside of my typical chicken or beef mindset, and it’s been a staple menu item ever since. It’s easy to make,  doesn’t have any off-the-wall or hard-to-find ingredients, has LOTS of flavor, works well for pre-made lunches, AND is packed with protein (the macro split is 41% protein/40% carbs/19% fat) — I really can’t ask for more in a dish. Healthy Southwestern Chicken Spaghetti Casserole

Happy Hump Day, everyone!

Tomorrow marks the first day of May, which equates to the beginning of swimsuit season in my brain. Here in Austin, we started the week of with temperatures above 90 that had me longing for the pool, and I realized that for the first time in my short 24-year-long (or short, I guess) life, I’m SO PUMPED to go bikini shopping. I might actually go this Friday. Coincidentally, the first few party barge/boat party invites have started to circulate, and I’m not worried about buying a cover-up to hide under. The fact that I have self-confidence WITHOUT having to drink a ton before I feel comfortable in a bikini is kind of a big deal to me. I’d say it’s an unbeatable feeling.
