First and foremost, I know it’s been almost 6 weeks since my last post. I’m noticing a theme in my blogging habits so far this year, and if I wanted to lie to myself, I’d say that I’m going to change these habits and post every single week. In complete honesty, though: things have gotten CRAZY busy over the last 4 months in all aspects of my life (personal, professional, and recreational), and I expect it to get even busier in the next 4-6 months. Posting every single week just ain’t happening, but I’m not going to beat myself up about it. Instead, I’m acknowledging the fact that I’m spending my time doing other things that are really important right now, and I’ll continue to post as often as I can. :o) Continue reading Meal Prep Lunch Recipe: Grilled Chicken Waldorf Salad
This is one of those posts that I’m starting with no clue of how it’s going to turn out, and at this point, nothing feels more right. :o) Big things are happening in my little world right now, and at any given second, my mind is in what feels like 60 different places. Some days, it’s exhausting. Others, it’s completely invigorating. Today is totally the latter.
I’ve been up since 4AM and have been going nonstop. I had a two-hour workout this morning, and I’ve been way more productive at work than I feel like I’ve been in the last several days. I’ve also had a few “aha”/lightbulb moments that I’ve been waiting for, and to top it all off, I’m going to my first football practice tonight.
That’s right — football practice.
I’ve been recruited to play Ultimate Women’s Football with the Austin Inferno, and I’m going to my first outdoor practice this evening. Yes, it’s full-contact. Yes, I’ll be wearing full pads and a helmet. And, yes, I’ll probably get beaten up quite a few times this season, unless I get there tonight and decide it isn’t for me (which I don’t think will happen). HAPPY FRIDAY! I don’t know about you, but it’s been a crazy, long week for me. Every summer during the first week of August, the company that I work for has a huge annual conference in downtown Austin. In addition to my usual weekly routine, I had a few trips to the convention center, my first experience with public transportation to and from downtown, and a couple of happy hours to attend.
I always consider August to be the hardest month for me in terms of sticking to my health and fitness goals; with NIWeek, the end of summer (lots of boat/pool parties), and my birthday all in the mix, I used to casually accept that I’d gain anywhere from 5-15 pounds during the month. Two years ago, this type of week was a perfect excuse for me to neglect my workouts, turn to food that was “convenient” (completely unhealthy), and use the abnormally busy time as an excuse to eat WAY more than my body needed.

Happy Monday! I hope everyone has had a great start to the week so far.
I had a marathon weekend that included some much-needed time with my best friend who came to visit for her birthday, and somehow still fit in meal prepping for people yesterday (all thanks to the help of my wonderful mom and boyfriend, who are the best sous-chef and grill master in history). I’ll be honest: getting out of bed was the last thing I wanted to do this morning. I’ve got the perfect “dinner in a pinch” recipe to share with you all that only takes 15 minutes and a few common ingredients to prepare. My long holiday weekend was filled with pool parties and lots of cooking, and consequently, I neglected to plan mine and Ryan’s dinners as thoroughly as I usually do. At around 8PM on Monday after a long day back at work and two hours of intense workouts to follow, I needed to think of something quick and simple for dinner.
My freezer had three basic options: Tilapia, chicken tenders, and a big cut of steak (which I want to save for later this week). I opted for the fish and decided to make a dinner that is a staple in my weekly meal prep for friends — Garlic Parmesan Tilapia. The pickings in my kitchen for sides were very, very slim, but I happened to have a couple of pre-made dinner rolls, a steamable bag of broccoli, and some cooked/seasoned spaghetti squash to use up. Convenient! If you don’t have the luxury of pre-cooked sides sitting in your fridge/pantry, you can cook up some vegetables, quinoa, rice, and/or any other easy side as the fish is in the oven. The point here is that your sides can be plain and super-simple because the Tilapia has enough flavor to carry the whole meal.
