Chicken Burrito Bowl + A Change in My Exercise Routine (FREE WORKOUTS!)


This is one of those posts that I’m starting with no clue of how it’s going to turn out, and at this point, nothing feels more right. :o) Big things are happening in my little world right now, and at any given second, my mind is in what feels like 60 different places. Some days, it’s exhausting. Others, it’s completely invigorating. Today is totally the latter.

I’ve been up since 4AM and have been going nonstop. I had a two-hour workout this morning, and I’ve been way more productive at work than I feel like I’ve been in the last several days. I’ve also had a few “aha”/lightbulb moments that I’ve been waiting for, and to top it all off, I’m going to my first football practice tonight.

That’s right — football practice.

I’ve been recruited to play Ultimate Women’s Football with the Austin Inferno, and I’m going to my first outdoor practice this evening. Yes, it’s full-contact. Yes, I’ll be wearing full pads and a helmet. And, yes, I’ll probably get beaten up quite a few times this season, unless I get there tonight and decide it isn’t for me (which I don’t think will happen). This is just the first of a few new ventures that 2015 is proving to have in store for me.

The second big change in my life: I cancelled my membership with Synergy and attended my final boot camp class yesterday. Starting next week, after almost 2 and a half years, I’ll have a change in scenery for my evening workouts. There are a number of reasons why I did this — none of which I’m going to dig into here — but I’ll say this: that place brought me a ton of great things, including my trainer/best friend who lit a fire under my ass and taught me everything I needed to know to lose 60 pounds and finally feel comfortable in my own skin. I have nothing but respect for all of the amazing coaches and campers that make Synergy what it is.

That being said, my new workout routine will include outdoor boot camps at 5:30PM (Monday-Thursday) taught by Kristina, and I am SO EXCITED to start. Not only will I be saving a few bucks a month from what I was spending at Synergy, but I’ll get to enjoy the outdoors for a little bit each day after being indoors at work all day long. Sure, it might be hot on some days, especially as we get into July-September. But, I don’t really care. It’s only for 45 minutes, and sweat + Vitamin D are both good things. Sunscreen and gallons of ice water will be my favorite exercise accessories.

The third big change is the biggest of them all. Kristina, (my other best friend) Stephanie, and I have been spending a lot of our spare time putting together a business plan to transition these outdoor camps to an awesome indoor facility. I know it might not be kosher to post about this when we have nothing (other than a name) finalized, but hell, I think a girl should be able to dream, dream big, and dream publicly — so I’m throwing this out there a little bit half-baked. My family is full of people who have found ways to live their passion each and every day, and I’m convinced that this is what led to happy, healthy, fulfilled lives for each of them. I feel like this is a “meant-to-be” sort of thing, and I feel like we three ambitious women have big things in our future. We want to change lives. We want to help people get healthy and achieve their goals. And, obviously, we want to have fun while doing it.

I know how much of an impact getting my health in check has had in ALL aspects of my life, and I want nothing more than to show the rest of the world that they can do it, too, without enduring hours on a treadmill or starving themselves on 1200 calories/day. Seriously, there’s a better way. I’m living proof, and Kristina is the methodology behind it. No, I’m not drastically changing course in any way at this specific moment. And no, I’m certainly not quitting my day job any time soon. This is a “big-picture” thing that we’re going to put a lot of time and effort into planning and building out.

That’s all I’m going to say for now, but stay tuned for the details! I get so excited every time I think about this that I can barely contain my fingers from typing more, but I know you want to hear about this burrito bowl. :o)

This recipe is my new favorite meal prep staple. When it comes to making lunches in bulk, my slow cooker will always be a kitchen essential. This was inspired by my Chicken Quinoa Casserole, but has a bit of a Mexican twist. And I intentionally left the picture off of this one — everyone knows that slow cooker meals typically come out looking like vomit — so make this, and let the amazing taste speak for itself!

Chicken Burrito Bowl

Nutritional Overview
Calories: 396
Carbs: 40
Fat: 8
Protein: 39

Serves: 6 portions (1.5-2 cups each)
Cook time: 4 hours on high, 6 hours on medium

Ingredients

  • 30oz shredded Salsa Chicken
  • 1 bag frozen corn, broccoli, and red peppers (found this at HEB!)
  • 1 cup chicken broth
  • 3/4 cup quinoa or brown rice
  • 2/3 cup chopped cilantro
  • 1/4 cup HEB That Green Sauce (or a comparable creamy, green salsa)
  • 1/2 cup medium-heat salsa
  • 1 cup diced tomatoes, Mexican style
  • 2 tbsp HEB Southwest Marinade (or red enchilada sauce)
  • Optional: 1 bag frozen fajita vegetables

Directions

  1. Line your slow cooker with a liner
  2. Throw all ingredients into said slow cooker
  3. Heat on high for 4 hours or medium for 6 hours, stirring 2-3 times throughout the cooking process
  4. Remove from heat and portion evenly into 6 containers
  5. And BAM! Lunch for the week is done.
