Banana and Oat Muffins

These are really good, gluten free, and only take a few minutes to make. Uou can use any dried fruit in place of the dried cherries. I used 1/2 cup of dried cranberries and 1/2 cup of raisins in place of the cherries.

  • 1 large egg
  • 3/4 cup apple juice (unsweetened)
  • 1 cup dried cherries (or any dried fruit)
  • 1 cup banana, diced
  • 1/2 cup apple sauce
  • 1 cup oat flour
  • 1 cup oats
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon


  1. Preheat oven to 400 degrees
  2. Mix dry and wet ingredients separately
  3. Combine wet and dry ingredients and mix until incorporated
  4. Spray muffin tins with Pam or use cupcake liners. Fill muffin tins to the top
  5. Bake 15-20 minutes

Let cool and serve. Makes 12 muffins.
