Turkey and Quinoa Stuffed Peppers

These are SO easy and surprisingly filling. We had these for dinner last night with Southwestern Black Bean Salad as our side. YUM.

  • 2 bell peppers
  • 6 oz. 99% lean ground turkey
  • 1 1/2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 cup Weight Watchers Mexican blend shredded cheese (optional)
  • 1/2 chopped onion
  • 1-2 cloves minced garlic
  • 1/3 cup quinoa
  • 2/3 cup low-sodium broth (vegetable or chicken)


  1. Preheat oven to 375 degrees
  2. Saute onion and garlic until caramelized
  3. Mix in turkey and spices. Cook until meat is lightly browned
  4. Cook quinoa in vegetable broth until liquid is absorbed (bring to a boil, then simmer for 10-15 minutes)
  5. Combine cooked quinoa with meat/veggie blend
  6. Cut the tops off of your peppers, remove the seeds, and stand them on end in a baking dish
  7. Fill the baking dish with about 1/2 inch water
  8. Add 1 cup of turkey mixture to each pepper and top with ΒΌ cup cheese (optional)
  9. Bake peppers for 35 minutes
